Festive Beet and Feta Salad
This is a beautiful salad to make anytime but especially for the holidays! This is a lovely addition to any meal and a very healthy option to balance out some of the not so healthy options.
Ingredients
2 large beetroot
3 cups of spinach
1/2 cup of feta cheese
1/2 cup of walnuts
Dressing
3 Tbsp of warm honey
1/2 cup of balsamic vinegar
3 cloves of garlic
2 Tbsp of olive oil
Pinch of salt and pepper to taste
Instructions
TO MAKE THE SALAD:

Preheat the oven to 400 degrees F. Wrap the beets with the skin on in aluminum foil and place on the medium shelve in oven.

Do the same with the garlic (skin on).

Bake for 45 minutes. When they are finished, remove the foil (be careful they are hot). Let cool slightly enough so you can peel off the skin.

Slice into 1/4-inch thick slices, and chop in quarters. Place beets on top of spinach. Top with toasted walnuts and feta cheese.
TO MAKE THE DRESSING:

Pour balsamic vinegar into a bowl the add the warmed honey.

Mix well and add a pinch of salt and pepper along with your peeled roasted garlic and smash it before putting into the dressing. Then pour over your salad.
Serve warm and enjoy!
